Walk-ins
Eight bar seats are held for walk-ins every night. Come early, stay late, order from the full menu.
Wood-fired · Seasonal · Alder Hollow
A seasonal kitchen built around a single hearth. Everything touches the fire, and nothing is hurried. Dinner Wednesday to Sunday.
The fire
We light the oak at noon and let it burn down to coals before the first guest sits. No gas, no shortcuts. Smoke and char are seasoning here, the same as salt.
The menu follows the market: what our growers pull from the ground that week is what comes to the fire that night, so no dish stays on longer than the harvest does.

Fire is an ingredient, not a technique. Our job is to listen to it, and then stay out of the way.Chef Mateo VargaChef & co-owner, fictional for this concept

Sat at the counter and watched the whole fire dance. Best seat in town.
They handled my gluten allergy without making it a production. Dessert was perfect.
